Poultry Rub

Ingredients

  • 3/4 c paprika
  • 1/4 c black pepper
  • 2 tsp cayenne pepper
  • 1/4 c sugar
  • 2 T onion powder
  • 2 T dry mustard
  • 1/4 c celery salt
  • 2 T lemon zest, dried

Instructions

  1. Mix paprika, peppers, sugar, onion powder, mustard, salt and lemon zest.
  2. Store at room temperature in an airtight container.
  3. Rub on chicken 8-10 hours before grilling or smoking.
