Makes about 3 cups

Ingredients

  • 1 1/2 pounds ripe peaches
  • 1/2 cup water
  • 3/4 cup sugar
  • 1 cup plain whole-milk yogurt
  • a few drops of freshly squeezed lemon juice

Instructions

  1. Peel the peaches, slice them in half and remove the pits.
  2. Cut peaches into chunks and cook them in water in a medium nonreactive saucepan over medium heat, covered, stirring occasionally, until soft and cooked through, about ten minutes.
  3. Remove from heat.
  4. Stir in sugar and chill in the refrigerator.
  5. When peaches are cool, puree them in a food processor or blender with the yogurt until almost smooth but slightly chunky.
  6. Mix in a few drops of lemon juice.
  7. Freeze the mixture in your ice cream maker according to the manufacturer’s instructions.
