Ingredients

  • 4 medium peaches, ripe but still firm
  • 1 cup rolled oats
  • ½ cup flour
  • ½ cup brown sugar
  • ½ cup butter
  • ½ teaspoon cinnamon
  • ice cream or fresh whipped cream

Instructions

  1. Preheat oven to 350 degrees F and place an oven rack in the middle of the oven. Lightly spray an 8"x8" baking pan {or the like} with nonstick cooking spray.
  2. Arrange the halved and pitted peaches in the prepared baking pan.
  3. Make the crumb topping by mixing the oats, flour, brown sugar, butter and cinnamon together in a medium bowl. Distribute the crumb topping evenly among the peach halves.
  4. Bake the peaches until they're soft and the crumb topping is lightly golden brown, 35 to 45 minutes, depending on how ripe the peaches are.
  5. Serve warm with ice cream or fresh whipped cream.
