Ingredients

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 c minced onions
  • 3/4 c fine dry bread crumbs or 2/3 c oatmeal(process until small bits)
  • 1 T minced fresh parsley
  • 1/2 t sweet basil(don't use the strong stuff- :( )
  • 1/2 t salt(we don't add this)
  • 1/8 t pepper
  • 1 t Worcestershire sauce
  • 1 egg beaten
  • 1/2 c milk

Instructions

Shape into balls size of walnuts. Brown in 1/4-1/3 c hot oil(depends on fat in your meat)

Remove meatballs to a casserole and continue to make gravy.

Gravy: Stir into remaining fat and drippings:

  • 1/4 - 1/3 c flour
  • 1 t paprika

Stir in 2-3 c boiling water

  • 3/4 - 1 c sour cream

Return meat to gravy; cook for 15-20 minutes more.

We cook the meat about 1/2 done on the first day and make gravy. We then put casserole in oven next day for about 30-45-60 minutes until the gravy is heated through and bubbling. If you are going to make a smaller batch, you might want to cook the meatballs more thoroughly, as they will heat up faster if you don't have the pan stacked with meatballs to heat up again.
